Puerto Vallarta, Mexico (August 26, 2022) - Velas Vallarta in Puerto Vallarta, Mexico is rolling out a new Mexican pizza menu with innovative takes on traditional flavors. These tasty meals come just in time to celebrate Mexico's Independence Day on September 16 but will be offered through the end of the year. The gourmet pizza menu includes Pizza al Pastor, topped with adobo marinated pork, grilled pineapple, fresh purple onion and cilantro; Mexican Pizza, with chorizo, beef fajitas, red onion and slices of pickled jalapeño peppers; a Cochinita Pibil Pizza, topped with the traditional pork, cheese, xnipec (purple onion and habanero with lemon and oregano), and black beans; Chile en Nogada Pizza, topped with "Chile en Nogada" stuffing, poblano chili slices, Nogada white sauce, and pomegranate seeds; and Birria Pizza, consisting of tomato sauce with birria broth, shredded birria, red onion, fresh cilantro and avocado sauce.

In addition to offering a new take on the trendy Mexican pizza, the resort will be celebrating Independence Day with memorable festivities. Guests can indulge in traditional Mexican food stations and snacks while relaxing at the pool; participate in typical Mexican games, crafts and contests such as "balero," "yoyo," and "papel picado;" and even engage in a charro contest to learn to perform rope tricks. The celebration will continue into the evening where an all-female mariachi group, waiters dressed in traditional Mexican party clothing, and beautiful, authentic decorations including piñatas, papel picado and more will enliven La Ribera restaurant.
