Welcome to Andrea, the gem in Velas Vallarta’s culinary crown. For more informal dining on the seafront, make your way to the resort’s La Ribera Restaurant and dine on juicy steaks and mouth-watering ceviche. But if you’re looking for an epicurean adventure,Andrea is the place to be. 

I realize this the moment I pop a fat, juicy prawn that’s been stuffed with freshwater crab and then flambéed in tequila into my (ever so grateful) mouth. This is the food of kings and queens. A culinary spectacle right here in the heart of Puerto Vallarta.

My luck continues, because it just so happens that on the evening I visit, the restaurant is participating in the 25th annual Festival Gourmet International Vallarta, which welcomes a star-studded list of guest chefs from around the globe to Puerto Vallarta each November.Lucky old me.

This means that the rest of my meal is a taster menu from visiting chef Hugo Sandoval. Sandoval leads the kitchen at Hacienda San Lorenzo at Casa Madero in Coahuila, which, with more than four centuries of wine-making to its name, is said to be the oldest winery in the Americas.

With mentors like Chef Geoffroy Maillard (1 Michelin star, Paris) and Chef Guillermo G Beristain (Pangea, Monterrey), Sandoval’s selection of inspired, refreshing and healthy dishes have firm roots in traditional Mexican flavours.

The service is seamless and every single irresistible morsel that’s presented before me is described in detail by the enthusiastic restaurant manager, Omar Moreno. He even brings Chef Sandoval and Chef Guillermo Carmona (Executive Chef at Velas Vallarta) over to my table to say hello. 

To say I feel special is something of an understatement.

After dinner, I get chatting to Omar – a gentleman with a larger-than-life personality whose passion for the cuisine at Andrea is palpable – and I ask him what he thinks makes this eatery so very special.

“It’s great here because we have menus from all over the world,” he smiles. “We have French, Asian, Mexican and Italian – and that really excites me about my job here. 

“What the waiters do here also makes this restaurant stand out. Our waiters are knowledgeable and they know exactly what they're serving, and I'm always at the tables to make sure that everybody’s happy and has what they need.”

When I ask him what his favourite dishes are on the menu, he finds it hard to choose, but after a little coaxing he opts for the Ossobucco di Agnello (lamb shank braised in Chianti andserved with caramelizedCambrayonions, baby carrotsand risotto aifungi - a highlight of the Tuscan menu that’s served on Wednesday evenings), and Camarones Tempura (deep fried prawns served with fresh carrot, jicama, Chinese cabbage salad, plum sauce with oysters and rice vinegar with mustard – a dish that adorns the Asian menu, which is served on Tuesday evenings).

But Andrea Restaurant has more to offer than its food. The people who work at Andrea add to the magic too. As Omar, who’s clearly extremely popular with his guests, laughs: “One of the reasons you should come here to Andrea Restaurant is because Omar is here!”

But that’s exactly what happened when I dragged myself away from Velas Vallarta’s swim-up bar and booked myself ontoa free tequila-tasting and cultural day tour. 

The tour startsout ordinarily enough. We drive into the city, take a peek inside a church, wander around a jewellery shop and wrestle down some tequila shots in a tequila factory.

Then we headinland from Mismoloyato Kawitu, a small Huichol village tucked away in the verdant green mountains where the Wixáritari people live. 

I get off the coach to wander along the riverbank towards the settlement as one of the villagers begins to slowly strike a drum and a face-painted shaman wavessmoking herbs at me in order to free me of anyspiritual impurities that I may be carrying into the village from the outside world.

To be honest, I’m probably carrying quite a lot...

I’m then handed a pretty feathered arrow, which I carry with me along the riverbank until I reach a sacred spot at the entrance of the village. I’m asked to plant the arrow in this sacred spot and make a wish. I obediently do as I’m told and I quickly make a heartfelt wish to return to Puerto Vallarta some day.

The Huichol village is a kaleidoscope of crazy colours – bridges bedecked in brightly-coloured paint, vibrant murals covering almost every surface and ribbons of every hue floating in the air. The drum beats on as we walk down to the river, step into the water and stand, holding hands, in a ceremonial circle.

The shaman enters our circle and performs an ancient energy cleansing ritual that centres around the elements of fire, air, earth and water. It’s hoped that that this will help us to find peace and harmony in our lives.

I feel like I may have a lot of peace and harmony coming my way because during the ceremony the shaman deems itnecessary to walk over to me not once, not twice - but three times - to wave his purifying herbs in my direction. 

So I either I have a lot of peace and harmony to look forward to, or he feels he has to make extra sure that all of those impurities in my soulareproperly cleansed!

At the end of the ceremony the drumming stops. We all turn to our neighbours in the circle and share a quick hug. Smiles and giggles break out on people’s lips and the seriousness of the ancient ceremony evaporates into the air. 

I have to say though, I do feel pretty good as I splash through the water towards the riverbank for my mahi-mahi lunch. I feel safe in the knowledge that my heart is pure and – because I planted a feathered arrow at the entrance to the village – I shall, one day, return to Puerto Vallarta…

In addition, research shows that meditating by the sea has multiple positive effects on your health and well-being. The experience started at 7:30 a.m., the perfect time to take an early class. You can enjoy a soothing atmosphere as there are no crowds around, you have 60 minutes entirely to yourself, your levels of concentration improve, the morning seaside air helps to cool you down, and the sun rising above the ocean is just amazing! 

Practicing my favorite asanas as I hear the relaxing lapping waves, feeling the grass under my toes, and practicing my best breathing techniques while the ocean breeze caresses my skin: one of the most revitalizing and wonderful experiences I’ve ever had. Exercising outside makes you feel more positive! 

Our instructor was a professional always willing to answer the questions of every participant. He told us he had 30 years of teaching experience. And of course, it was not difficult to see how this discipline has helped him maintain a healthy body and mind. 

With fun-filled family activities and relaxing options for everyone to enjoy, choosing Velas Vallarta was doubtlessly a wonderful idea. My husband delighted in sophisticated premium brands, my children had fun at the Kids’ Club, we all made sandcastles on the beach, and savored ice cream by the pool. A renewing and exquisite experience we will not soon forget!

Curious fact: There are two versions of this sculpture. The first was inaugurated in 1960 in Las Pilitas, but unfortunately, it was washed out to sea by a storm. In 1976 a larger replica was made, but later the original sculpture was found.

Al pastor pizza

Its delicious origin comes from the tacos al pastor, those typical ones that we find almost in every corner of Mexico. That flavor is transported to the pizza with its traditional meat marinated in a special sauce, grilled pineapple, cilantro, and fresh red onion.

“Al Pastor” comes from the term grazing —in Spanish ‘pastorear’—since initially, the meat used for this preparation was the ram, which was directly linked to said action. In Mexico, it became trendy after the Lebanese migration for its famous shawarma.

Cochinita pibil pizza

The typical Yucatan dish, with the traditional preparation of pork meat with achiote and pickled purple onion with lemon, oregano, and habanero chili —known as xnipec— is the most exotic combination you can try on a pizza. The preparation gives it that unique touch of southern Mexico, which this pizza can perfectly complement with beans or cheese.

Achiote is the main ingredient of this preparation, and it is a red powder obtained from grinding the seeds of the fruit of the urucú or achiote. It is a bush that grows in tropical areas of Mexico, the Dominican Republic, Central America, Colombia, Ecuador, Venezuela, Peru, and Bolivia.

For its part, the cochinita pibil is a pre-Hispanic dish from the Mayan culture. This dish is usually cooked on special dates with venison, pheasant, or turkey meat; its cooking is traditionally in a pib, an earthen oven, hence its name ‘pibil’.

Chile en nogada pizza

The chile en nogada is typical for September. It is a poblano pepper stuffed with beef and pork mixed with fruits such as apples, plantains, pears, peaches, almonds, and raisins. When served, it is bathed in the nogada, a white sauce made of Castile walnuts, almonds, goat cheese, and milk, decorated with pomegranate seeds and chopped parsley.

Its origin is very peculiar, but its version of pizza is even more so. The prepared meats with fruits are placed, bathed with the delicious nogada sauce, and poblano peppers are added in slices. A mix of flavors that you must try!

Birria pizza

Another specialty that we eat in tacos. The birria is a typical dish for celebrations or family gatherings, and its flavor is unique. It can be goat, mutton, or beef, which is marinated with a variety of chiles such as ancho, pasilla, guajillo, garlic, tomato, and onion, as well as spices such as oregano, cumin, ginger, bay leaf, and pepper.

Originating in Jalisco, it can be prepared in two ways: in broth or the oven. The latter is the traditional way to slowly cook the spiced meat and keep all its juices to make tacos. However, cooking it in a pot and taking advantage of its broth is also a delight, accompanied by onion, cilantro, and lemon.

Birria in pizza also turns out to be a delicacy because the shredded meat is placed with a bit of broth, red onion, cilantro, and avocado sauce. Exquisite!

Mexican pizza

This last pizza, rather than highlighting a specific typical dish, very characteristic ingredients of the country are extolled. The Mexican pizza includes chorizo, beef fajitas, red onions, and pickled jalapeno peppers. This mixture of flavors is an explosion on the palate, and in addition to being something very exotic, it is also a great representation of the gastronomy of Mexico.

The apparently simple preparation of this dish —consisting of a portion of maize dough mixed with other ingredients such as iguana, shrimp, beans or fish, and later wrapped in a corn or banana leaf, and steamed—, required the development of instruments such as stone scrapers to remove corn kernels; pichanchas or clay pots with perforations to rinse the nixtamal; to grind the grain, metates; and to cook the dough, pots that resisted the heat, and lids. 

The nixtamalization, grinding, kneading, wrapping and cooking techniques that these cultures learned to dominate, are practically the same ones that continue to this day, proving the effectiveness of Mesoamerican ingenuity.

After this interesting introduction to the origin of tamales, we invite you to take a tour through the different regions of Mexico to prepare your palate and learn more about this delicious dish, of which there are about 370 varieties, and that gives identity to our country.

NORTH

Wrapped in dry corn husk, or totomoxtle, tamales from the northern region are prepared in smaller portions compared to others, which is why they are known as “finger” tamales in Nuevo León, and they are also popular in Chihuahua, Coahuila and Durango. They are usually filled with shredded meat, machaca (dried meat) or asadero cheese and are seasoned with dried chilies.

HUASTECA

In this vibrant region shared by the states of Veracruz, San Luis Potosí, Tamaulipas and Hidalgo, tamales take on a different proportion. The delicious zacahuiles can measure up to 5 meters (16.5 feet) and are cooked for approximately 10 to 12 hours in a texcal, an oven set under the ground with firewood and hot stones. This dish made with crushed corn dough, turkey meat or pork seasoned with chino and cascabel chillies sauce, and wrapped in banana leaf. This tamale is served in large celebrations. 

OAXACA

The Oaxacan version of the tamales is wrapped in a banana leaf and the dough is flavored with acuyo or holy leaf (pepperleaf). The most common fillings are black or yellow mole, pork in red sauce, and rajas (sliced poblano pepper).

In the Mixteca area it is common to find sweet cocoa tamales, wrapped in a corn husk for cooking, and bathed in a cocoa shell sauce that adds a bit of acidity to create a contrast of flavors.

In the central valleys of the region you can often find tamales de piedra (stone tamales). The dough is mixed with beans and wrapped in avocado leaves.

On the coasts of Oaxaca you can find tamales de tichinda, a river mussel, seasoned with red chile sauce, a recipe shared with its neighboring state, Guerrero.

MICHOACÁN

One of the states with the greatest diversity of tamale recipes is Michoacán. The Canarian tamale from Zitácuaro is made with rice flour to which almonds are sometimes added, and the lard is substituted with butter.

Pátzcuaro’s uchepos are made with tender corn dough and are fluffier, accompanied by sour cream, cotija aged cheese and green sauce.

The corundas are perhaps the best known, and they are wrapped in a banana leaf giving a triangular shape to this version of the tamale. They are not usually stuffed, but you can find them with chilaca pepper slices or green sauce, pork and purslane.

SOUTHEAST

Yucatan tamales are filled with cochinita pibil and wrapped in a banana leaf. They are accompanied by habanero pepper and pickled red onion.

In Chiapas, the cambray tamales are the most popular, and are offered as a great feast at all celebrations. They are made with shredded chicken, prunes, raisins, fried banana, olives, bell pepper, and almonds.

Another Chiapas favorite is the chiltepin tamale, a very common plant in southeastern Mexico and Central America that gives a delicious flavor to the dough. They are filled with chicken or shrimps and cooked wrapped in a banana leaf.

The pejelagarto or tropical gar, is always present in the kitchen of Tabasco, and it could not be left out of the tamale recipes of this state. You can also find the chanchamitos, seasoned with axiote or annatto, and tamales made with strained dough to give a smoother texture.

CENTRAL ZONE

With many shared recipes, in the states of Tlaxcala and Puebla, ayocote tamales (a Mexican bean up to 2 centimeters long) await you. They are accompanied by pipián, a sauce dating from the pre-Hispanic era made with tomatoes and pumpkin seeds. During its cooking, they are wrapped in totomoxtle.

In the center of Tlaxcala, anise tamales are served at large parties as an accompaniment to the main dish, mole con pollo, to collect every last drop that remains on the plate.

The cuisine of the Bajío (lowlands) region, which has great influence from the center and Michoacán, includes tamales muertos in its recipe book, made with blue corn dough and wrapped in corn husk, filled with mole, rajas or pork meat.

In Mexico City, it is very common to find a stall of mole tamales filled with green sauce and chicken, rajas with cheese and sweet, wrapped in corn husk, and a proper supply of bolillos (a typical Mexican bread) to prepare the famous guajolotas, which are nothing more than the tamale placed in the middle of the bread.

THE GULF

In the port of Veracruz you will find ranch tamales, whose dough is flavored with holy leaf and then filled with pork or chicken seasoned with morita chile.

In the town of Tepetzintla they prepare them with beans cooked with chicharrón (pork rinds) and coriander and are wrapped in papatla leaf, similar to the plantain leaf but smaller, and widely used in the region.

THE PACIFIC AND SEA OF CORTEZ

In the states of Colima, Jalisco, Nayarit, Sinaloa and the south of Durango they prepare a tamale made with corn dough nixtamalized with wood ash, mainly oak.

In Sinaloa they cook the pork tamale with lard, potatoes, olives and a mixture of chilies, they can also be stuffed with chilorio (a dish made of pork fried in chile sauce) or shredded beef. Other typically Sinaloan varieties are the tamales tontos or silly tamales, made only from dough without any filling; and the tamales barbones or bearded tamales, very typical of the coastal city of Escuinapa, prepared with shrimp with the head and the ‘beards’ coming out of the tamale.

Sonoran tamales are thinner and medium in size. The dough is filled with carrots, peas and pork, beef or chicken seasoned with guajillo chile, which gives a red color to the corn husks in which they are wrapped.

What is a cactus?

This plant comes from the desert, and while it mainly grows in arid regions, the cactus has a unique adaptive capacity, surviving in gardens worldwide and areas with different climates. The plant is well-known for its thick stems covered in prickly spines or sharp spikes, but these characteristics have not hindered taking advantage of its benefits.

Origin of the cactus 

The cactus is an endemic plant species in Mexico that also grows in a small area of the United States. Dating back to pre-Hispanic times, it has been an important source of nutrition for Mesoamerican villages.

Additionally, it is said that when the Aztecs were looking for a place to build Tenochtitlán, Huitzilopochtli, the war god, claimed to them that the promised land would feature a majestic eagle perched on a giant cactus called nopalera, eating a snake at the same time.

Peek into the origin of chiles en nogada

The origin of this dish dates back to 1714, but it was not until almost a century later, in August 1821, that it became popular. The story says that at the time Agustín de Iturbide took command of the Trigarante Army —with their tricolored flag that represented the three guarantees: religion, union, and independence, the inhabitants of the capital of the state of Puebla offered a banquet for him, featuring this exquisite local dish.

Nogada Festival: tradition and innovation

To strengthen its commitment to preserving the essence of Mexican culture, Velas Vallarta has reinvented the classic nogada sauce to offer a limited-time celebration of gastronomy, mixology, and wellness: the Nogada Festival.

Velas Vallarta embraced the culinary tradition of nogada with six new dishes on its menu, available for a limited time. From savory options like tamales, enchiladas, pizza, and pellizcadas (a delightful “sope”-style treat) to sweet creations like crepes and ice cream, the resort used the ingredients of nogada as inspiration. Beyond these dishes, mixology shines with the exclusive Dragon Ball cocktail, made with pomegranate liqueur, dragon fruit, pickle juice, gin, tonic water, and fresh pomegranate.

Additionally, AMET Spa at Velas Vallarta harnessed the benefits of pomegranate to offer a massage incorporating fresh juice and seeds, combined with expert techniques, for a rejuvenating and transformative experience. Recipe to enjoy chile de nogada at home

If, on the other hand, you’d like to recreate the delicious taste of chiles en nogada, here is a special recipe so you can treat your family with the flavors of one of the most representative dishes of Mexico and its Independence festivities.

Ingredients:
25 pcs. Poblano chile ready to fill

For the picadillo (ground meat):

• ¾ cup corn oil
• 6 garlic cloves
• 1 cup onion finely chopped
• 1 kg of ground pork
• 1 tablespoon of salt
• 1 cup of water
• 1 kg of tomato liquefied and strained
• ½ cup of peeled almonds
• ¾ tz. chopped black raisins
• 20 pcs. green olives
• 2 tbsp. finely chopped parsley
• 4 pcs. cloves
• 1 cinnamon stick
• Black pepper to taste
• 4 cups apple, diced
• 4 cups pear
• 4 cups criollo peach, diced
• 1 tbsp. of sugar
• 4 cups of plantain, diced
• 100 gr. pink pine nut peeled
• 2 tbsp. white vinegar

Procedure for the picadillo:
1. In ¼ cup of oil, fry 2 cloves of garlic until they are completely golden, and discard the garlic. Season the onion, add the meat, salt, and water, cover, and cook until the meat is tender, for approximately 5 minutes.
2. After a few minutes, uncover so that all the water evaporates and, if possible, the meat browns a little.
3. Heat another 3 tablespoons of oil in another frying pan, brown 2 garlic cloves, and discard. Season the remaining onion, add the tomato, and leave to season. Add almonds, raisins, olives, and parsley, and let the mixture season for 2 minutes.
4. Grind the cloves, cinnamon, and pepper, add the tomato, and remove the pan from the heat.
5. Add the tomato mixture to the meat, let it season for 5 minutes, and remove from the heat.
6. Add sugar and mix.
7. Separately, fry the banana until lightly browned; reserve the excess oil to fry the chilies.
8. Mix the fruits, bananas, pine nuts, and vinegar with the meat.

Ingredients for the batter:

• 12 pcs of eggs
• 1¼ cup flour
• 2 tbsp. of salt
• 2 cups. corn oil

Batter procedure:

1. Beat the egg whites until stiff peaks form. Add the yolks, salt, and ¼ cup of sifted flour. Mix all the ingredients well until well incorporated.
2. Flour the chiles and remove the excess.
3. Heat the oil where the bananas were cooked to the point of smoke. Dip the chilies in the egg mixture and carefully fry one by one. While the lower part is lightly browning, with a spatula, coat the upper part so that it browns evenly.
4. Drain on paper napkins to remove excess fat from the coating.
5. Keep warm and reserve.

Ingredients of the nogada:

• 1 cup peeled almonds soaked in water
• 5 cups cold water
• 400 gr. goat cheese
• 8 cups clean English or Persian walnuts, known in Mexico as nueces de Castilla

Nogada procedure:
1. Soak the almonds overnight in cold water. Refrigerate preferably.
2. Mix all the ingredients in a bowl except the water.
3. Blend, adding water as necessary. The texture must have consistency.

Presentation:

• 2 pcs. red pomegranate shelled
• Chopped parsley for decoration

Place the battered chilies on a plate. Serve the nogada over the chilies and garnish with parsley and pomegranate.

1. En el año 2005 se adquirió una propiedad en Puerto Vallarta llamada Quinta Real, de arquitectura de estilo hacienda, y se cambió su nombre a Casa Velas. Este sería nuestro tercer hotel en la zona, pero ahora con el concepto solo para adultos.
